As we age, the collagen present in the skin begins to break down and can lead to the appearance of fine lines and wrinkles. The synthesis of new collagen by the special skin cells called fibroblasts requires the assistance of several key enzymes. These enzymes require certain vitamins in order to function properly.

Vitamin C

Vitamin C is required for collagen production. It serves as an antioxidant to other important co-factors used for collagen synthesis. Vitamin C deficiency causes an illness known as scurvy. Symptoms of the disease include gingivitis, skin hemorrhaging, anemia and general weakness.

Copper

Copper is a mineral that is required for the production of collagen protein. Copper helps form collagen through the work of an enzyme called amine oxidase. This enzyme helps build a strong chemical structure that makes collagen an effective connective tissue. Dietary copper is found in seafood, whole grains, legumes, nuts and seeds.

Iron

Iron is another mineral that is required for the production of collagen. It works in concert with vitamin C to assist enzymes in carrying out the biochemical reactions that convert amino acids into the collagen protein. A study published by Dr. Concetta Gardi, et al, in "Biochemical Pharmacology" in 2002 found that iron supplementation increases collagen production in rat liver cells.

Niacin

Vitamin B3, or niacin, is a water-soluble vitamin found in dairy, meat, eggs and fortified foods. It contributes to skin health in many different ways -- one of which is to increase the production of collagen. A study published in the "Journal of the American Academy of Dermatology" in 2010 led by Dr. Jenny Kim found that cells grown in a test tube showed increased collagen production when supplemented with niacin, suggesting that the vitamin may be helpful in preventing damage caused by exposure to ultraviolet radiation from the sun.
