Cholecystitis, or inflammation of the gallbladder, is caused by gallbladder stones. Bile made in the liver is stored in the gallbladder in liquid form. When a meal with fat is ingested, bile is released from the gallbladder to assist in digestion. Gallstones form from harden bile. A gallbladder stone that blocks the bile duct can result in severe abdominal pain, nausea and vomiting, and inflammation of the gallbladder. High cholesterol in the bile causes 80 percent of gallstones, according to the National Institute of Diabetes and Digestive and Kidney Diseases. High cholesterol foods and fatty foods can trigger gallbladder symptoms.

Trans fats are found in commercially baked cookies and other pastries, according to MayoClinic.com. Trans fats are a particularly bad type of fat and elevate LDL cholesterol while lowering high-density lipoprotein, or HDL, cholesterol, considered "good" cholesterol.
