A gallbladder attack can be excruciatingly painful, it is typically caused by a gallstone blocking the bile duct, according to University of Maryland Medical Center. The gallbladder is a sac-like organ located just under the liver, where bile, which breaks down fat, is produced and stored. Gallstones can form from hardening of digestive acids and cholesterol. Avoiding high-fat, high-calorie foods can help prevent the formation of gallstones.

High Cholesterol Foods

Cholesterol, a type of fat, is one of the main components of gallstones, along with water, bile salts, fats and bilirubin, according to the National Institute of Diabetes and Digestive and Kidney Diseases. Gallstones can form when there is more cholesterol present in bile than can be broken down; therefore, foods high in cholesterol can increase the chances of forming gallstones and suffering a gallbladder attack. Foods high in cholesterol include egg yolks, duck, goose and organ meats such as liver and kidney. One egg yolk contains 213 mg of cholesterol, according to eMedTV. Fried foods, including french fries and all fried meats also contain large amounts of cholesterol.

High Fat Foods

Eating a diet high in fats is a risk factor for developing gallstones and triggering a gallbladder attack, especially a diet that is high in animal fats. A healthy diet should contain no more than 30 percent of calories from fats, according to Jackson Siegelbaum Gastroenterology. When preparing meats, all visible fat should be trimmed away and discarded. Meats and fish should be baked, steamed and broiled, as opposed to fried. Foods high in fats include whole milk, ice cream, cream cheese, butter, cream, fried vegetables, cream soups and sauces, marbled beef, ground beef, pork spareribs and many deli meats.

Refined Foods

Refined foods, especially those containing trans fats, should be avoided by those who suffer gallbladder attacks, according to the University of Maryland Medical Center. Refined foods include foods containing white flour, such as white breads and pasta, and white sugar. Trans fats are found in processed baked goods, including snack cakes, cookies, doughnuts, crackers and margarine. Being overweight is a risk for developing gallstones, according to the National Institute of Diabetes and Digestive and Kidney Diseases. Eating a lot of refined foods, which are typically high-calorie foods with little nutritional value, can lead to weight gain. It is healthier to eat plenty of fresh fruits and vegetables, which are lower in calories and higher in fiber.

Food Allergens

A study conducted by J. C. Breneman in 1968 suggests that gallstone attacks, but not gallstone formation, may be linked to food allergies in some cases, according to Nutrition Science News. In particular, eggs, pork and onions were responsible for triggering pain in some people suffering from gallbladder problems. Other food allergens pinpointed in the study include poultry, dairy, corn, bean and nuts. Dr. Breneman theorized that inflammation caused by food allergens can cause obstruction of the bile ducts.
